BS 684-2.6:1989 is a British Standard that details the method for determining the saponification value of fats and fatty oils. The saponification value is a measure of the amount of alkali required to saponify a given quantity of fat or oil, expressed as milligrams of potassium hydroxide (KOH) per gram of sample. This value provides information about the average molecular weight (or chain length) of the fatty acids in the fat or oil, which can be useful for characterizing and comparing different fats and oils.
