Perisian National Instrument LabView telah diguna bagi membangunkan program untuk mengawal dan mengoptimumkan proses penapaian. Program ini telah dibina berdasarkan pada model kinetik yang terdapat dalam rujukan literatur. Program ini dipilih kerana kebolehannya dalam membenarkan pemantauan masa nyata dengan perolehan data sebenar dan dapat melakukan kawalan langsung terhadap proses penapaian bagi memastikan keadaan yang optimum untuk proses penapaian. Pengaturcaraan telah dilakukan dalam gambar rajah blok LabView, manakala kawalan proses telah dilakukan di panel hadapan LabView. Panel hadapan program ini the direka dan dibangunkan dalam keadaan mesra pengguna supaya mudah dikawal oleh pengguna, serta pengguna mendapat gambaran yang lebih jelas dan tepat mengenai proses penapaian. Proses penapaian dapat dibahagikan kepada dua fasa, iaitu fasa pertumbuhan dan fasa penapaian. Dengan memanipulasikan pembolehubah input proses penapaian, maka penapaian dengan kondisi yang berbeza dapat dicapai dan dianalisis. Pembolehubah manipulasi bagi program ini adalah nilai pH. Pembolehubah bergerakbalas yang telah dianalisis oleh program ini adalah kadar perubahan kepekatan yis, perubahan kepekatan substrat, perubahan kepekatan produk dan jumlah produk yang dihasilkan. Berdasarkan analisis yang telah dijalankan, telah didapati bahawa keadaan optimum bagi proses penapaian adalah pada 4.50-10.00± 0.05 pH . _______________________________________________________________________________________________________ National Instrument LabView software was used to develop a program to control and optimize the fermentation process. The program was built up according to the kinetic model from the literature. The use of LabView software allowed real-time monitoring with real-data acquisition, and direct control of the process to achieve optimum conditions of the fermentation process. The programming was done in the block diagram of the LabView, while the control of the process was done in the front panel of the LabView. The front panel of this program was designed and developed to be user-friendly in order easier for the user to control and received a good visualization of the fermentation process. The fermentation process can be divided into two phases; which are the growth phase and the fermentation phase. Through manipulating the input variables of fermentation process, fermentation with different conditions can be achieved and analysed. The manipulated variables for this program was the pH values. The output variables that were being analysed are the rate of yeast concentration changes, substrate concentration changes, product produced changes and the total product produced. From the analysis that been made, it was found that the optimum conditions for fermentation process was at 4.50-10.00± 0.05 pH.
