BS 684-2.7:1989 is a British Standard that details the method for determining unsaponifiable matter in fats and fatty oils. Unsaponifiable matter includes substances present in fats and oils that do not form soaps when treated with alkali and remain insoluble in water. These typically include hydrocarbons, sterols, tocopherols, and certain pigments.
