The British Standard BS 684-2.2.24:1989 provides the methodology for the determination of the anisidine value of fats and fatty oils. The anisidine value is a measure of the amount of aldehydes (mainly 2-alkenals) present in the fat or oil, which is an indicator of the extent of oxidative deterioration.
